Here I am sharing a very tasty Spanish Omelette recipe. It is very tasty and a quick recipe for your breakfast, please try it. Everyone definitely loves this authentic spanish omelette recipe. Ingredients:

1 large raw potato ( 1 cup )( kaccha aloo you can use boiled as well )
1 large onion ( 1 cup ) 1 cup cabbage ( optional ) 1/4 cup oil 1/2 tsp salt 3 eggs 1/2 tsp salt 1/2 tsp pepper powder coriander or mint leaves 1/2 cup cheese ( optional )

Method:

  • Take a pan and add 1/4 cup oil.
  • When oil heated add fine-chopped large-size potato. Fry for 2-3 min at medium flame stir continuously until potatoes get a little soft.
  • Fry these potatoes at medium flame for around 3 min.
  • Then add 1 cup onion. Also, fry 2-3 min onion on medium flame.
  • After 2-3 minutes add 1 cup of cabbage. (It's optional, you can make this Omelet with onion and potato also)
  • Add half tbsp salt. Here we add a low quantity we will also add salt later.
  • Close the lid and cook for 7-8 minutes at low flame. After cooking for 7-8 minutes potatoes and onions are soft.

  • Now turn off the flame, take it out on a plate, and let it cool down.
  • In a bowl take 3 eggs, add 1/2 tsp salt and 1/2 tsp pepper, then whisk it gently to make it fluffy.
  • When it becomes fluffy add coriander leaves and mint leaves.

  • Now add the fried potato mixture to the egg and mix it well. Now Spanish omelet mixture is ready to cook.
  • Let's proceed to cook it. Take a pan and heat it on medium flame, add 2 tbsp oil into the pan, and spread oil all over the pan.
  • When the oil is heated, add half Spanish Omelet mixture to the pan. And keep half the mixture for later use. (I am using cheese that is why I am using the mixture twice. if you are not using cheese then you can use the mixture at once.)

  • After adding half the layer of potato mixture into the pan make a layer of mozzarella cheese and then spread over the later half of the half mixture above the cheese. Here I will completely cover the cheese with a potato mixture.

  • Put the gas flame low at this time, and cover the lid for 6-7 minutes. After 6-7 minutes lower side of the omelet is cooked. Now put the plate on the pan and flip it to change the other side of the omelet to cook.
  • Transfer the omelet to the pan to cook. Cook this side again for 6-7 minutes by covering the lid, the gas flame should be low.
  • After cooking it for 5-6 minutes our Spanish omelet is ready.
  • Turn off the flame and serve it. Transfer the omelet to a plate, perfect and mouth-watering Spanish omelet is ready to eat.
  • Serve it with a sauce.
